Once you have chosen the jamón, there is another decision: how would you like it sliced? Hand-carved and machine-sliced packs offer different experiences at the table, without changing the underlying breed or feeding category of the ham.
The useful comparison is about shape, texture and the way you plan to serve it. It is not a shortcut for judging the quality of every pack.
| Format | What to expect | A useful occasion |
|---|---|---|
| Hand-carved | Smaller pieces with natural variation in shape | A dedicated tasting plate |
| Machine-sliced | More regular slices, depending on the producer | Easy layering and informal sharing |
| Either format | Quality also depends on the ham and its preparation | Choose the ham category first |

Keep the ham and the slicing method separate
Bellota, Cebo and breed information describe aspects of the ham itself. Hand-carved describes how it has been cut. A hand-carved pack is not automatically Bellota, and a machine-sliced pack can still contain excellent ham.
Compare like with like where possible: the same category, similar pack weight and clear product information. Otherwise you may be comparing two different hams as well as two different cuts.
Notice the shape of each bite
Hand carving follows the changing shape of a leg, creating pieces that can vary naturally. That variation can make a tasting plate feel particularly engaging: each small piece has its own balance of lean meat and fat.
Machine slicing produces a more regular format that is convenient for sandwiches or an informal platter. Thickness still matters in both cases; the method alone does not guarantee that every slice will be identical or ideal.
Serve the slices without crowding them
Follow the pack's storage and serving guidance. When ready to plate, separate the slices gently and lay them with only a small overlap, rather than creating a dense mound.
Put simple bread or picos alongside and let the ham lead. If you are comparing two packs, label the plates and keep the accompaniments the same so you can focus on the difference you actually want to taste.
Compare the sliced options
Spend according to the occasion
For a gift or a ham-led tasting, the presentation of a hand-carved pack may be part of the pleasure. For a casual lunch, the convenience of regular slices may matter more.
Read the pack weight before comparing prices, and consider how much you need. The best choice is the one that fits both your preferred ham and the way you will eat it.
A quick check before you choose
Does hand-carved mean 100% Ibérico?
No. Slicing method and breed percentage are separate pieces of information. Check the product's full description.
Do I need a special ham knife for these packs?
No. A prepared sliced pack is ready for plating according to its label. Whole legs are a separate choice with different carving requirements.
